Knoxville Harvest rescues prepared and perishable foods; which would otherwise be thrown away; from local restaurants, schools, groceries and other sources in our community. Food like day-old baked goods, milk and cheese approaching expiration, bruised fruits and vegetable, perishable goods with damaged packaging, and even meat products are rescued. The food is rapidly distributed, in a refrigerated truck, to on-site hunger relief agencies such as soup kitchens and shelters where it can be served quickly to hungry people seeking help.
The agencies (shelters and kitchens) that receive the fresh food from Knoxville Harvest save a tremendous amount of money everyday thanks to the free food they receive through the program. Shelters and Kitchens would spend millions of dollars a year if they had to purchase the food they receive through Knoxville Harvest.
Finally, the hungry people who receive plates of food prepared from Knoxville Harvest food, are getting high-quality, fresh, nutritious food instead of frozen, canned or packaged product. The nutritional value of Knoxville Harvest food is a real benefit for a group of people that typically eat a high sodium, sugar and carbohydrate diet.
